Preparation without sugar
- Allow the pastry to soften at room temperature.
- Place the cream, milk, egg yolk, flour and SteviaSweet Crystal in a small pan or saucepan. Slowly bring to the boil, stirring continuously.
- Once the custard has come to the boil and thickened, remove the pan from the heat. Add the grated lemon zest and vanilla. Leave to cool.
- Preheat the oven to 225 °C.
- Roll out the puff pastry to at least half the thickness. Cut into 16 squares. Fold the corners of the squares inward and form circles. Place the pastry pieces into the muffin moulds, lining the base and sides.
- Spoon in the filling, leaving space for rising. Place the moulds on a baking sheet.
- Bake on the middle shelf of the oven for approx. 15 minutes.
- Leave the tarts to cool slightly before removing from the moulds.
- Sprinkle with cinnamon and serve lukewarm.
